Ingredients:
1 tbsp of butter (or olive oil)
1 small yellow onion, finely chopped
3-4 cloves of garlic, finely chopped
2 cups of vegetable broth (or chicken broth)
1 cup of uncooked quinoa
Salt, to taste
1/4 cup of grated parmesan cheese
Directions:
- In a medium sauce pan, sautee the onion and garlic in butter (or olive oil) over medium-high for 3-5 minutes, until onions are just soft and the garlic is golden brown. Reduce heat to medium low.
- Add the vegetable broth and quinoa. Cover, and allow to simmer until liquid is mostly absorbed and quinoa is cooked. This takes about fifteen minutes.
- Remove from heat. Gently stir quinoa. Season with salt to taste, and top with Parmesan cheese.
The meal filled me up, and it didn't take a huge portion to do so. I had one helping, plus some chicken to add a little protein to the mix. Now I have some healthy left-overs that I can pop in the microwave in the next coming days. I think I will add some steamed broccoli for next time.
