Okay, I've been on a serious protein kick lately as I'm trying to build muscle. One meal I really enjoy making and scarfing down is protein pancakes. I've had it for breakfast and dinner so much lately. It's a little obsessive, but they are so good. I've been playing around with ingredients to see what I like best. This is what I've come up with:
Blend together:
1/4 cup oats
1/4 cup egg whites
1/4 cup lowfat cottage cheese
1/8 tsp baking powder
2 tbs flax seed
1 scoop of protein powder
Heat on skillet. Serve hot.
I sometimes add peanut butter or blueberries to the mix. I like to change it up. I top them with berries or bananas, or nuts. They are simply divine and are packed full of protein, making them a great post-workout meal.
Thanks for this. I made protein pancakes last night and I was looking for a good recipe (I found something similar). I used greek yogurt in place of cottage cheese and they turned out fantastic. I will try yours next time.
